The Slow Pour: An Appalachian Coffee Tradition
In the South, and especially here in the Blue Ridge Mountains, Blackstrap Molasses wasn't originally about a specific flavor profile—it was about necessity.
While refined white sugar was once a "short" luxury reserved for the wealthy, molasses was the "everyman’s" sweetener. It was rugged, resilient, and packed with the iron and minerals needed for a hard day’s work.
Over time, that necessity turned into a deep-seated tradition. We didn't just use it because we had to; we grew to love its smoky, complex depth.
Why Molasses in Coffee?
Adding molasses to coffee isn't just about sweetness; it’s about soul. The dark, bittersweet notes of a third-boil molasses pull out the hidden chocolate and toasted nut flavors in a good coffee bean.

The Recipe: Appalachian Molasses Cold Foam Coffee
Ingredients
For the Coffee:

25g freshly ground Organic Guatemalan Coffee

350g hot water (just off the boil)
For the Blackstrap Molasses Cold Foam:

2 tablespoons heavy whipping cream
-
1 to 2 teaspoons blackstrap molasses (adjust to your taste)

1/4 teaspoon vanilla extract

Optional: A small pinch of sea salt for contrast
Method
1. Brew the Coffee
Brew your pour-over as usual. We like a 1:14 ratio for a bold cup that stands up to the rich molasses. Bloom for 30 seconds, then continue pouring in slow circles until you reach 350g. Let it draw down fully.
2. Make the Cold Foam
In a small bowl, whip the heavy cream until it just begins to thicken. Add the molasses and vanilla. Continue whipping until light and airy. The molasses is dense, so whipping it into the cream ensures it sits gently on top of your drink rather than sinking to the bottom.
3. Build the Cup
Pour your fresh coffee into your favorite mug. Spoon the molasses cream over the top. Finish with a tiny pinch of sea salt if you like that sweet-and-salty "salted caramel" vibe.
Pro Tip: Take a sip without stirring first. Let the layers meet naturally on your palate. Then, give it a gentle stir and notice how the character of the coffee changes as the molasses incorporates.
